How to control moisture with realistic weather?
Do I need to water the crops or something?

just with rain. I've tried to sprinkle water on fields but nothing change

Until giants adds it to the game currently there is no way to manually add moisture to crops with the exception of the flooded fields. And those are gimmicky with just turning the pump on once a month/as needed.

The last few mods in previous FSgames simply added a fertilizer layer instead of moisture.

As moisture is in game one can only hope that either Giants or a modder/script writer adds it to crops for a center pivot irrigation system or something similar.

You can control the moisture in a limited way if you make some changes to the environment xml for your map. By default the amount of time it rains for is 1-3 hours. I changed it to 1-10 hours so it rains longer. Still not proper control but it increases your chances for higher moisture. If you do change the rain time don't forget to set it for each season and for each type of rain.
