Some workaround is to manually edit "Steering Sensitivity" settings (game limit for it, is 200%) in "gameSettings.xml" file (in game save folder). Relevant xml node is "steeringSensitivity" (no surprise here;)), I ended up with 300% (3.000000 in xml).
BTW it's weird, that we have different settings for same thing in game, and in menu.
I am playing with a controller and its fine. You are just expecting twitch level controls.
Consider to write a book about it next time. You have the controller settings also for Steam Input. For PlayStation controllers connected to PC I would recommend DS4 https://ds4-windows.com for even more adjustment.
Or rather, the steering is NOT the main problem, it's the extremely slow return!
Steer any direction let go of stick and watch the wheel and tires move in super slow motion.
Also, Giants, in their near infinite wisdom, give you no notification that the game was updated. I guess I'll have to open Steam every day and spend time looking for some patch notes instead of just, you know, double clicking on an icon on my desktop and being notified of a change when the game opens. Gee thanks Giants!
And finally: I still cannot see why this was done in the first place. It doesn't offer any more "realism" when driving. Like I sated before, using the keyboard everything turns just like before. Where is the realism in that?
Its looking more and more like the old adage of "mods will fix it" remain to be true. I'm grateful for modders and their hard work. What i won't just sit by and accept is shoddy/shady dev practices concerning updates to the core game.

op, is this the first game you have ever played? and how did it update if you didnt have steam running?
It is no where in the same part of the galaxy of being like realistic steering.
If ANY of my tractors steered like that i would be dead years ago.
In the real world the faster you go the less input required to control the vehicle. This simulates that aspect and is a realism change. If you cannot understand that I suggest learning to drive.
