I do not think they are too low, they are not meant to be a source of your main income.
In FS22 we got bigger contracts, like making silage bales in the huge grassfields for like 35-40k€, plus harvest profit. It took considerably longer because you had to do all the steps, but i liked that better to be honest.
Feels kinda boring to drag all the equipment to a field, just to do one simple step, rather than taking care of the whole job from start to finish instead.
