I checked myself and indeed there's no option to rebind pause key, I have even checked config files in userdata folder in order to check if there's option to rebind it manually from the controls file, however there's no such option even there.
Either the option got removed in some of later patches for some unknown reason or it wasn't added in the first place. I assume that the key might be "hard-coded" into engine and thus can't be rebinded or it's hidden somewhere in some different file.
If you're having some problems with unpausing, since some keyboards don't have pause key (and numpad and some other keys.) then you might have to use function key (FN) with combination of some other key (usually they have a key next to them in different colour that shows what key it will trigger when combined with function key.) to trigger pause key.
Or just plug in a normal keyboard with pause key available and use that. I'm aware that this option would be tedious to do, but considering that the last update was like 2 years ago, I wouldn't count on the developers doing anything with that.
