I'm extremely familiar with the Love2D engine (Lua) and it's powerful enough for a game like this.
Unlike Unity, it's 100% code based (instead of the Visual tools that you get with other engines like VisualScript with Godot etc.) so it's a lot easier to use if you're more of a programmer than a 'game dev'.
I'm unfamiliar with Lua and Roblox but if it's any type of OOP base I'm sure you'll find it easy (plenty of libraries which can basically add OOP functionality to Lua).

I posted what I had a few post back, thinking I might hit up Paul about putting them on IA or something so they don't go whenever my Dropbox might. Only had like up to 295 I think and only got the 2d remake, sadly don't have anything from 2.5d.
