Is there a 1920x1080 resolution?

The closest I found was a 1920x1440.

You can try to force the game to run on your desired resolution by adding in launch options(which you can access by opening your Steam library > right mouse clicking on Sven Co-op > properties and in new window there should be "Set launch options..." button)

-w 1920 -h 1080

The game itself does have that resolution but(if I recall correctly) might not show up due your GPU\monitor.

It probably doesn't show up because the "Display Mode" drop down is set to Standard.
Change it to Widescreen and you'll get the 16:9/16:10 resolutions.

Yeah I just typed in those launch codes, it automatically put it to 1920x1080 and widescreen

I suspected as much, though you'd have not needed the special launch option as the drop down would have revealed the resolution you wanted. Launch options are meant to be for special cases rather than general use.

It'd be good to check if you remove the launch option completely to see if this works as intended.

no i dont see it anywhere until i put in the launch options
