Also, you can force the game to start at a specific res. Edit (or create) the file at %APPDATA%\Doublefine\BrutalLegend\screen.dat. %APPDATA% is C:\Users\[login name]\AppData\Roaming on Windows 7, but it might be set to something else.
Screen.dat should look something like this, customized for your preferences:
fullscreen = true
width = 1920
height = 1080
refreshrate = 60
vsync = false
So that you know, the first time the game starts, it enters fullscreen mode. It chooses the fullscreen mode by using the same width/height as your desktop, and using the highest refresh rate that is supported by your display. It sounds like that combination of width/height/refresh rate isn't supported on your machine. Could you give any details on your machine's configuration? What video card and display are you using?
I got a GTX 420 and for some odd reason, it picks resolutions by default that are far, far higher than my monitor can support (I run it at 1280x720 usually, but as I said in my OP it picked a completely bizarre resolution to start with and 120hz refresh rate when my monitor is at 60hz). It's not a problem just with Brutal Legend, it's a problem with all games, but most of them I can run in a window then pick my desired resolution.
There's a known issue with alt-tab/alt-enter causing the videos and front end to stop rendering. I think that's what you ran into-- so my advice about alt-entering wasn't helpful (it would have worked if you were in the game, but you can't get to that point without being able to see the screen). Your best option is to adjust the screen.dat as you found, and we'll fix the alt-tab/alt-enter issues.
Screen.dat should look something like this, customized for your preferences:
fullscreen = true
width = 1920
height = 1080
refreshrate = 60
vsync = false
