I cant kill one Super Mutant brute

I'm using about 400 rounds in my Assualt Rifle and it wont die...

Are any of your limbs crippled? Do you have sufficient skill points for using guns? Are you playing on a higher difficulty or with any combat mods/tweaks? It'd help to include details.

Enemies are bullet sponges on this game, they can take a full mag in the head without dying (even humans).

No way should even a Supermoo master or overlord take that amount of ammo. A brute should take no more than 20 rounds, even if your assault rifle is in poor condition.

Long time i didn't played this game but imo the best way to kill Super Mutant is to specialize in melee or unarmed, they are slow once you are close to them, just non-stop hit them with a Shishkebab or unique Power-fist while running around them so they take more time to turn in your direction instead of actually shoot you.

If you still prefer ranged combat with Guns, Lincoln Repeater or a Sniper Rifle in good condition will do just fine. :)
