Where do you find the Police/Officer suit?

Get in there and find the elevator, it will drop you at the entrance of the cantina. Check every door (doing that will alarm the people so it will be a shooting). I can't tell you the exact room but if it's before Tuesday you'll find it by some blue lockers. After Tuesday is hidden but still is in that place.

I never got it from killing a policeman in standard Postal 2, but it's hidden in the locker room on the third floor of police station every day from Monday till Friday.

Its only there the first time you get it. I believe every time after that, you have to go to the laundromat to pick it up, unless you are playing Enhanced Mode of course.

I got the uniform from the locker on PL and was continuously wearing it until a cutscene where it reverted back to the dudes standard clothes and ever since then the uniform is missing from my inventory. It just has the dudes clothes there and it tells me to change into them but i already am!

You can pick it up only once per day and wear it only once, when you change back to Dude's clothes, you can't re-wear the uniform on that same day. But it respawns everyday.
