I keep 15 days rum at all times. I think the number turns red if you're 10 days or less. Check when you buy it at the store.
I'm not sure how much food you need, but I keep 20 days. I'm sure I could get by with less.
Sometimes a Monk will approach you on the street, and you pay him 50k pesos to serve as chaplain on your ship. This may help raise morale. He'll leave if you ever raise a pirate flag.
I've had morale drop very slowly when my ship was overloaded, so there may be more going on here than overloading.
