In a fight on foot what you want to do is press the - key on the numpad on the right side of your keyboard to slow down time. Pressing the minus or - key will slow time. Press it twice to reach half speed. Then you should hold space to block. Let the enemy run out of stamina hitting your block unless he starts doing a heavy overhead attack. If so you can stip pressing space and hold shift and press middle mouse button to counterattack or hold shift and press right mouse button to parry. Counter attack is better for 1 on 1 and parry is better against groups. If the enemy is blocking you can hit him with a heavy attack by pressing middle mouse button without holding shift. When you can afford it buy a pistol with lead balls and gunpowder from the weapon street vendor. Equip the pistol and you can shoot with the Q key. Best to wait until the enemy is blocking or he's out of stamina to shoot because you can't defend when shooting.
Solid combat advice
I'd add that you can actually animation skip putting the pistol away by hitting block after firing the shot, saves frames and allows you to block any riposte attack. Block can be used to cancel any combat frame, in case you miss time a counter.
Are you solo piloting a class 3 with very low NAV? Because that would explain the slow speed and constant mutinies
Use a guide, it's not worth your time to just "figure stuff out", this is not a game that likes to tell you what you need to do. (I've found a nice pdf guide for TEHO, works fine with this version, I can share it with ya if you want)
I don't even get a chance to take a pistol shot before I'm cut down in a boarding.
I use my grapeshot but the other ships still fire cutting down my men, so when I board and they surrender I have barely any crew left for "minimum crew" both ships, I have one boarder and one navigator that's all the officers I have. Even if I go to a harbor fort the other ships turn and run where I can't catch em.
I can't even find jobs where u can transport someone from town to town, can't even find those anymore.
if they have low crew get some distance and "goad out" a shot from a side of the ship, it'll take them forever to reload and that's the side you want to board from, if you get in close and they have 20 cannons on that side loaded with grape they're going to ruin your day. Also If you stay in close the AI ships will load grape shot and let you have it, so another tactic is to load grape, get in close and fire, then retreat out of range of their grape shot, the AI with stay with balls or bombs loaded as long as you aren't breathing down their neck.
If you can't get transportation quests you might have a guy you didn't deliver, you can only ever do one transport at a time. Failing a bunch might lead to not getting more like some quests in TEHO.
