Simple fishing is in fact just toggling reeling on/off as opposed to needing to hold the button to reel, yeah. It can make it harder at times to let go on a moments notice.
Best advice I can give is to just pay attention to the line and keep reeling so long as it isn't red, let go until it stops being red, then keep reeling.
sardines i caught in 5 mins, all 3 that i needed. you have to go to where the captain is, right under his house, where the 3 shellfish are, sardines spawn every min or so. it take a bit longer because they yank in the opposite direction - thats when you have to not click for a second and then click again. its ...really not as hard as some other games. best of luck.
Took me until fishing level 7 to figure this out ... There may be harder challenges ahead, but the herrings and rainbow trouts no longer daunt me.
Oh, and yeah, the 'simple fishing mode' actually makes it harder. LoL. Some goofball idea.
THIS! I tap the button as it swims away (only stopping when the line goes red and the fish gets mad) then hold when it's reeling in. This has worked for me in 2 other games with similar fishing mechanics. It stops the fish from swimming out to far. Yes, it can take longer with more "rare" fish. The only problem I found is one spot with the broken bridge by the mines. Those fish you can't catch without a "stronger line" lol. I wonder what rod level they require... I am pretty sure I'm on the third rod.

In all seriousness though, it seems to just be down to patience. I've been having good luck with making sure they're facing the lure (you might need to wait for them to swim back towards it) then jiggling. Once they show interest, jiggle again. Two to three jiggles should do it.
Took me ages to get that down, though. Seriously, these fish are worse than the ones in Animal Crossing when it comes to turning and swimming away the second you cast your line. And the loading screen will give you tip that a fish is easier to reel in if it's closer, but the little a-holes start swimming for Bangkok the second you hook them.
I've gotten the hang of the fishing but I can't say I love it.
Reel in (hold down) when the fish is facing you once hooked.
Fish is pulling away? Mash (tap-tap-tap) the Reel button to "stagger" the fish and have a higher chance for that "gleam-proc" to get the fish to instantly turn around, but ease up on mashing if it starts turning red. The "mashing" helps me get my fish the first time.
