The game's mechanic is geared toward 3 vs 3. The single mode is an extra challenge for already experienced players. Ditch it now. You face a boss with a single character while you are learning the game, you will never beat it. They didn't balance this mode like you think they did.
If you want to learn the character moveset and combos, go to traning mode. Then play the game normally through regular arcade mode. Oh, since you are learning the game, only play the NEO GEO mode. The default Ultimate Match version is signifcantly harder... I played just now testing my arcade stick after a long time without playing the game and noticed how cheap the Ultimate Match arcade mode is. Still beat it with one credit though, but had a hard time. And I'm somewhat experienced with OG KOF 98.
TL DR - play in Neo Geo Mode. 3 vs 3. Test different characters and team combinations to see how you like them. Don't worry about getting too good with just 1 character. Better be average with 3 characters who you like. You will learn the mechanics and your characters with time.
Don't jump. Use rolls if you need to attack. The cpu has problems dealing with roll->throw sequences.
