Unfortunately just this week I realized something important is missing in this part of the 101 guide, which is how to edit a library entry to point Proton to any folder as its prefix... I used it to be able to let my wife play a game from scratch without nuking my own progress in the same game even though it has no support for multiple saves/player profiles... it can also be used to run any software (steam-bought or not, game or otherwise) like the Origin installer in an existing or new empty profile folder of your choice.
Just go any library entry on steam, on its properties, then in the launch options you can set:
In your case this means you can create an entry on Steam to run the Origin installer via Proton in a chosen prefix and later edit the entry to run the installed game from that same prefix.
ps: I don't mean to dissuade you from buying this game or anything, but you should be aware that despite the hype around it, Dragon Age: Inquisition has always had several gross bugs and shortcomings, plus an insuferable performance and stability even on windows (a friend of mine was utterly disappointed because of those things when he got the game, bought on pre-release, and some of it never saw an official solution as far as we know)... so if you eventually get it running, be careful not to assume everything that goes wrong in the game us due to running inside Proton/Wine, when searching for a fix/workaround/whatever
Edit: Oh, when I used winetricks, it borked Proton 5.0-4 to the point that it wouldn't run anything - needs Win7 or greater. I assume winetricks altered the Windows version, but I didn't dig into it, just re-installed Proton.
my suggestion doesn't even require winetricks in principle, only running more than one software on a specific profile, so maybe it's a way to avoid that problem at least...
of course if the profile needs any more tweaks you may need it anyway, but with the recent work done on proton it's at least worth trying to run a clean profile first
edit: Oh, yeah put the windows version to 10 in winesettings.
