ISA MapSat[kerbalspaceport.com]: Allows you to map planets, generating accurate topographical data.
Chatterer[kerbalspaceport.com]: Simulates real transmissions from Mission Command, which are actually NASA and Roscosmos transmissions played backwards.
KSPX[kerbalspaceport.com]: Adds more stock parts to the game. Could be seen as realistic, I guess.
IonCross[kerbalspaceport.com]: Adds crew management and resources into the game, meaning you have to manage oxygen, carbon dioxide, food...
Deadly Re-entry[kerbalspaceport.com]: Adds re-entry heat and more realistic re-entry physics, meaning your ships have to be more aerodynamic and re-entry capable.
I'd double-check these are the most up-to-date versions, as the ones on Spaceport are usually less reliable than forum threads.

Yes. I haven't used it yet, but I know Maverick here on the boards is using it. It is from the same modder who did TAC Fuel Balancer. It's called TAC Life Support. Kerbals need food, water, oxygen and electricity (to maintain life support equipment, heat, cooling, etc.) and produce CO2, waste and wastewater. Kerbals will die if they go 30 days without food, 3 days without water, 5 minutes without oxygen and 2 hours without electricity. Hab modules have initial supplies, EVA suits take half a day of each resource from the pod the Kerbals exit. He even has some initial IVA models like Oxygen cannisters. It's a WIP, but it functions.

Not entirely realistic depending on where the rover is, but is in fact pretty fun, rover wheel sounds.
Also not sure if it works, but Kerbquake which would let your vessel shake in IVA view depending on situation and g-force appplied etc. but I am also not sure if it's working currently, havent played KSP in a while, check it out :)
