No, you can't toggle periapsis on and off.
If that's not the case, burning retrograde should give you a stable orbit eventually. If you use a maneuver, that will help you visualize what's happening and how long you need to burn to get where you want to be.

It sounds like it the periapsis just won't show in a hyperbolic orbit like this. It shows when I made the node to get into this orbit, but disappeared when I deleted the node.

It's common to switch SOI and have no Pe. (FYI: It happens a lot with Mechjeb)
You should only need to start burning retrograde as soon as the SOI switches to Mun and Pe should "pop back out" off the surface. Once it does, burn retro to desired altitude and then set node to circularize.
EDIT: You also noticed Pe "reappeared" using a node. That's the Pe that *you will get* if you burn as per the node, not the Pe you currently have (or not for that matter...yikes).
@OP: PE sometimes bugs out due to mods. I don't remember happening on a stock game but if it ever happens again either go to spaceport and back (that usually fixes things) or just burn at the lowest point (at the hump in your picture). But always zoom in so that you can see if your PE is not in the actual object and if so do a correction burn as {RLT} VestedGamr said.
Rotated screen around for a better view, zoomed in and yes, impact imminent. Quick burn to fix.
It only happened once though and that's why I attribute it to a random bug. Either way all our solutions are valid.
Hey we can see quite easily... Just F5 time warp and if you crash it's normal. If you don't then it's a bug.
Are you effing serious? You need to burn in the opposite direction in order to achive an orbit. Please DELETE this thread. It's no bug you just don't know how to play the game. I recommend you to go watch Scott Manley videos.
