For new guys of KSP, Anon's advice is probably best though.
Ok Lets make that any number above 2 that fits your current ship design.
The greater the number of legs the more stable your craft should be.
Assuming that you installed them correctly.
No joke most of the more powerfull engines will stick below most landing legs so you need to find a way to get the legs to extend BELOW the engine's exhaust.
I've seen pic's posted that have landing legs attached to the very bottom of a fuel tank that had an atomic motor attached and they wonder why their engines fall off\get destroyed on landing.
Also it depends on the weight\weight distribution of the craft.
The_Mell added an example pic below.
Remember that more legs == more weight == less delta v (more fuel consumption to get where you are going)
On the other hand: more legs can compensate hard landings.
Oh, and with career mode you can try to substitute few big landing gears with many smaller legs - try...
