Report a translation problem
I've been playing around with your design for a bit and i Think i found The Problem, it's actualy a flaw in the swept wing design. the model of the wing is smaller then the actual boundrey the game is taking for it's measurements to base it's furthest point forward. so the game is actualy thinking that the swept wing is ahead of your COG. when it's not.
the wing needs to be moved back quit a bit before it's behind the cog... so you need to move more weight forward or move the wing back almost the full length of the MK1 Fuel fuselage behind where it is.

as you see in the pics, moving the wing back solves the issue, (preferably you do it better then this :p ) but that is as far forward as the wing can be attached before it's front is ahead of the center of gravity of this design and so given the reversed controles for Pitch, screwing things up :(
I'm avoiding swept wings with elevons until they get the issue resolved. Even if I get it to the point where it is ok on launch, as I use fuel, the location of the CG will drift a bit, meaning the controls could be switched around at any momment... best just not to use them.
