Procedural fairings
I found a mod known as procedural fairings, and I built a Delta IV rocket using the fairing. However, when I go to jettison the fairing, it causes the fuel tank and engine on the spacecraft to explode. The only thing left is the capsule and anything attached to it, such as the MechJeb unit, radial chutes, heat shield and its de-coupler, basically meaning the capsule is a brick. I've used KW rocketry, but it caused the game to freeze on the startup loading screen. Any suggestions?

IIRC you can alter the force with which the fairing shields are ejected with the menu you get by right-clicking at the fairings base

Then perhaps you should release the fairings later (when the 2 side rockets have been detached ... and/or when the rocket is in space)
1) Adjust power of ejection
2) Adjust 'torque' of ejection
3) DO NOT eject when igniting new engine stage, you'll run into fairings... causing damage
4) I've never EVER, had any problems with 'procedural fairings', adjust things accordingly and you'll be fine.

I'm pretty sure procedural fairings are actually in the base game. Why not just use them instead if you're having trouble with the modded ones?

Only eject fairings with staging, never with right click. And only when your vessel is in microgravity outside atmosphere. Below 6m/s you can also eject inside atmosphere

The only fairings in the base game are the "advanced Nose Cones". I like those, but with a lot of the rockets I've been building, they haven't been very aerodynamic. That's why I figured I'd give PF a try. Also, I only eject fairings after upper-stage burnout, so all there is left is to eject the fairing and iginte the spacecraft's engines. I'll try reducing the force with which they jettison to 0 or so.

Try the three "airstream protective shell" parts. AE-FF1, AE-FF2 and AE-FF3.

I don't think the procedural fairings mod has been updated since those parts were added to the game, which may explain your issues.

Both the stock and the modded fairings can easily cause that much damage due to collisions.

Stock Bug Fix adds a few more tweakables to the stock fairings.

Those airstream protective hells are what I was talking about when I said about the acvanced nose cone. Thee spacecrafts I've been putting inside the fairing haven't been a uniform shape, meaning the fairing isn't aerodynamic.

I'm afraid that the problem exists between keyboard and chair this time. Within the maximum width limitation, it's possible to give them any shape you need.

I've actually got the hang of it now. The last iteration of the Delta IV used the AE-FF3, and it was aerodynamic, that, and it didn't cause any damage to the spacecraft.

You can also use the Stock Clamshell Fairing mod to avoid both the need for Keramzit modded fairings and the "confetti".

Has that been updated since KSP was updated to 1.0.5? I googled Stock clamshell fairings, and a result saying "Plugin (1.0.4) Stock Clamshell Fairings"
