How does staging work?
Every time I lauch a rocket the rocket's parachutes deploy directly when I press the lauch buttom

Probably your staging is upside down, Parachutes would normally be at Stage 0 (the top of the staging) while engines would be at the bottom of the staging sequence.

The higher the number, the earlier the stage is activated.

Welcome to the first of many staging problems you will have. Been a long while since I played last, but iirc, the staging button is on the lower right as you are assembling your rocket. Then you can set anything you want to have its own stage.

You can add new stages during construction by clicking the little +, then dragging a staging icon into the new stage.
stages are in ascending order, from bottom to top

Yes, the numbering is the reverse of the tradition.

Look at your staging stack like you look at your rocket but as a schematic diagram. They should line up.

Both should have engine(s)/clamps, then a separator, than more engines, etc. in the same sequence, from the bottom up.

Parachutes should be on the tippy top. :D

When in the VAB or SPH (the buildings where you build your rocket or plane), in the lower right you should see an orange bar with a grey area containing an engine and parachute symbol. To the side at the top and bottom should be a plus and minus symbol.

Click on the plus symbol and a new stage will be created. Click on the engine and then drag it down to the new stage.

At least off hand I think that's the way round for the signs.

As the stage system becomes bigger and more complex, stage 0 will always represent the final stage.

lower right side of the screenshot. you can see the "staging stack", which is numbered from 6 at the bottom to 0 at the top. 6 is the "first stage", which includes launch clamps and thusters. each time you hit the spacebar (that's the default), it will advance it to the next stage. staging starts at the bottom (higher number) and works it's way to the top (last stage is always 0).
