I have always preferred browsing the official forums addon threads and picking and choosing what I want that way. These will provide links to places that may or may not include Curseforge.
You'll often see people recommend CKAN which is a mod manager.
My main caution is think about what you want to change and look for specifc things relating to that, adding them slowly rather than just throwing a hundred mods you have no idea what they actually do all at once.
Some mods won't work if they're not up to date. Basic parts mods are usually ok though even if they're a few versions behind (you may occasionally see a version mismatch error when the game loads, but you can usually ignore it).

Just try not to get carried away installing too many things at once. Read the popups when it's installing a mod. Sometimes it'll need to download extras to make it work properly (config files for some of the graphical mods for instance). Other times it'll just recommend other mods that are specifically made to be compatible with a mod you've selected. They're usually good choices though.
Curseforge is fine... They got hacked years ago. It's happened to a bunch of other websites, many of which you probably use every day.
I would recommend using an ad blocker though.
This is all spot on.
I think you may have misunderstood why I said not to use Curseforge as the primary source to find mods. It was simply that many mods are not there and that someone would be better off looking through the official forums or CKAN.

If the extracted file has a file call "Gamedata", put that in Gamedata instead.
You want to take what is inside the mods GameData folder and put that inside the install GameData folder.
It's a folder, NOT a file.
If you do it the way you suggest, you'll have a gamedata folder inside your gamedata folder; which will not work.
You want the contents of any gamedata folder (NOT the folder itself) from a mod, in the games gamedata folder.
