You cannot change the direction you face? Seriously? What am I missing.

Change the camera angle. W is whichever direction the camera is facing.

In space? I have spent an hour the last week or so moving around, I've changed the direction the camera faces and, unless you mean l/r there is no change in what direction the jets push.

I could maybe crabwalk to a destination, but up is up and down is down no matter which way I face,

Are you not typing "R" and using the pack to manuver?

IF you are crawling around on the outside of a ship you are kinda limited by handholds to whatever direction they run in. Then W is up/fwd, S is down/back, A and D are the left and the right. Space is let go and F is grab. B will allow you to board when at a hatch.

Pressing "R" will flip down the arms for a little jet pack and allow for flight like RCS thrusters will (which is what it is). Then you can manuver like a spacewalk as a "craft" using RCS.

You do have to let go first before activating the pack. Don't sweat running out of RCS - the pack has enough DeltaV in it to almost push a craft to the Mun.

Yeah, I was using WASD and E/Q to rotate. But while I could change my orientation temporarily by using the LMB, hold/rotate, the Kerbal snapped back to a fixed facing as soon as I used the jets.

I'm fine on Minmus/Mun whatever, but in space it's insane. Rescue missions are a cinch to get the ship near, and a royal pain to get aboard. I'm fine if I can hop out of my ship and hop back, but ship to ship, not so much.

1.1? I haven't upgraded from 1.05 and I can't vouch for it - but did fly circles around a ship earlier today with a pack just by holding W and rotating my camera.

He's talking about how the y-axis is the same for everything. You can't 'roll' a Kerman. This has always been a pain for me too, since it often causes a Kerman to launch off the side of a ship when an attempt to grab the ladder fails due to physics.

I think I'm just doing a poor job of explaining it. I can kinda "roll" them by changing camera angle and just manuvering in a single direction while I change the camera angle. You can also vary axis by pressing two (or even three) axis keys at once but that gets messy fast.

The camera will always be behind you while using the jetpack. When you want to rotate the kerbal.....move the camera in the direction you want them to face, then press space bar to make them face that direction. Then carry on moving as you please. W =Forward S= backwards A=left D=right Shift= Up Ctrl=down. Change the view with the V key and find which views works best for you, I like chase. Hold LMB and drag to make the kerbal pitch forward or back, left or right....but this is pointless really. Just move the camera in the direction you want to go, press space bar, this makes the kerbal face where you are looking with the camera. It's easy once you realize moving the camera comes first, then a quick press of the space bar. Once you get good, you can rotate the kerbal first and already have them facing the direction you want before you move the camera and press space. Pressing the other keys also works rather than space, but I got in a habit of pressing space and it also doesn't interfere with my momentum, space just does a quick turn to face which ever way you're looking with the camera. Takes a bit of time to learn. Just realize, if you're floating along moving forward and you turn the camera because you want to face to the left, and you press space, and you're now facing left, which is the new forward, your momentum from moving forward before will now be stopped by moving left. Confused yet? LOL

Also, when walking, I believe the alt key switches between modes. If you want to face the camera and walk, press alt and pressing S will make the kerbal walk towards the camera rather than walking backwards....something like that. I dont use this much.

There's also a setting in the options. Eva auto rotate to camera. That might be what you're looking for in EVA controls....much harder though.
