It would literally be 5 minutes of work to make a similar mod to add the Mk1-2 back in.
If you download my mod, and look at what's in it you can see what you'll need to pull from the game files.
- Turn on Advanced settings in VAB
- select tech level tab
- select number 1
- Hey presto! old stlye Mk1 Pod next to new one

Also that's not the one he's talking about, he wants the old 3 seater.
After a bit of poking around, it's not quite as simple as it seemed to be.
The depreciated parts, are sort of only...half in the game, if that makes sense? They get swapped out for the modern version when it tries to load to keep backwards compatibility.
However, when I tried to bypass this and load it like a normal part, on it's own; it was in the parts list, with all it's stats and what-not but the model itself was invisible. IVA works, but launching it just borked the game completely and spawned me in a star field. I'm honestly not sure why this is, as the config file seems fine besides the few things I had to change to make it show up in game, and all the relevant textures and such are there.
I think I'd need the original part files from a prior version, which I may actually have somewhere. Can't promise anything, and it may not happen soon, but I'm going to look into adding it back in that way, if no easier solution presents itself, or no one else has a better idea.
