Is it possible to transfer science?
If my goo pods are on a component I need to jettison, is there any way to put the science from the pod into the cockpit that I will be recovering?

EVA -> Right click on the part when you're next to it -> "Collect data" -> move next to capsule -> either board capsule or right click on capsule and select "store data"

As @dwringer said: Just store everything in the cockpit. Notice that you can also store multiple reports this way, so you can make several cockpit,EVA and surface reports during a mission.

There's a science storage box which has fairly large storage, you can put your science data in it too.

I have a lander and science bay chock full of science data on the mun, it doesn't have enough fuel to get home. Is there any way of salvaging all that data, can I transfer it to and orbital lab, a another ship, download it into jebs brain, anything?

Yeah - take it all out of the pod, the same way you would take each bit from its particular experiment, and carry it over to the ship you're going to fly away in.

If you have an antenna on youre spaceship you can also transfer the science home (at 30% science from the 100% you get if you return the ship to Kerbin). Later on you unlock stuff in the tech tree wich cause the transmitted science to be higher then 30%).

I just hate loosing all that science so almost always return it.
