But as mentioned above just thrust up there and throttle off when you reach peak... in the lower left is your navigation panel, click on the purple button and the number on the left is your "peak" height and time it will take to reach it. Just burn up until you see the Peak number hit your goal and as you coast up you will slow down.
One other important factor to note... many of these test speeds involve Surface speed and not Orbital speed so make sure to click the top center of your nav ball to cycle it off orbit to surface.
The bigger tip I have is to try to use manual engines for those, not boosters. It was much easier to get it to that point, and you can slow it down before the chutes actually have to fully open, then get some practice thrusting to a safer landing. I typically also added extra chutes, since flights like that are very likely to land near KSC anyway, good recovery, so just land it all.
