Either way, the system can get confused by symmetry modes, either mirror or n-way radial.
In a pinch, you can attach struts one at a time. The move tool can help make sure everything is aligned perfectly.
Landing legs are bugged in the current version. The LT-2 tends to explode on contact with the ground quite easily. This should be fixed in a later update.

Your best bet is to build the radial thrusters without symmetry (as a subassembly or below the rocket), and only attach them radially when you are done. Struts work best when you start at the central tank (where you can pick the correct symmetry) instead of the radial boosters (where KSP will pick insane symmetry).
