Yes aether dmg is totally viable and doable as sole focus build "this is what vast majority aether builds have been doing for years"
if you're referring to "accidental" secondary dmg because DoTs are not converted then yes this is true; but it generally doesn't factor in to the build because you don't scale those damages, or at best scale them to a degree where it's a fraction of your overall dmg
aether, chaos and pierce works totally fine, you don't have to go duo dmg focus "to benefit from some dot" nor does most builds deliberately do this
If you get vitality dmg as aether build; it's usually because you just happen to get some on +aether items "because most items in GD gives 2-3 dmg types", doesn't mean you actually scale vit dmg because you wont get much RR for it without focus (let alone as mage hunter), nor will you get a combined total vit bonus boosting the DoT or duration effects of it in a significant way.
Same goes for Lightning, without scaling electrocute and additional duration your dot amounts to tickles, and again you're in limited RR territory (both magehunter and spellbinder) for the pitance of electro you do have
*also worth to know that with direct conversion DoT can be be entirely lost, not just not converted, gone, poof, doesn't exist, making its scaling that much worse
