Also, there is not much information from the devs to the community - what is a bit sad, because they did a mostly good job before.
As far as I see the issue (I had it before myself), it has something to do with the AI/pathfinding and the implemented multicore usage (they called it performance optimization in the latest patch, that has caused this issue) of the engine.
So you shouldn't try too much tweaking on graphical settings - since they're not working for most people at all. (And I don't believe they have something to do with the freezing issue)
Only thing that seems to help consistantly is to force the game to use only the first core of your CPU. To do this, you have to open the windows task-manager, right klick on grimdawn.exe in the process tab, choose; 'set affinity' and check only your first CPU core which is called 'CPU 0'.
It seems that this have fixed for me - and many others said, it works for them - but I haven't done that much testing. Also; keep in mind, that you have to set this everytime you start grimdawn new!
There are some other advices out there - like switching to windowed mode - but also if some people experience a better outcome, most of them still getting freezes - even if it seems that they don't occuring as often as before.
One other thing to keep in mind: If you have a rather old CPU (like me) and switching to single core usage, you most likely running into some stuttering and overall worse performance. So you better don't try it with hardcore chars. ;)

However it seems to work if i run it in a single core.
Still freezes. First thing i tried.
The only thing to prevent the freeze is to run it on a single core.
Run Grim Dawn
Press ctrl+alt+del
Start task manager
Go to processes
Rigth click "grim dawn.exe"
Click "Set afinity"
Uncheck all cores EXCEPT "Core 0"
Press OK
By freezing, if you mean crash or game application who stop suddendly to respond to OS, randomly, i belong like you to players who suffer from this problem. Each time i must CTRL+ALT+SUPPR to kill GD.exe from memory after freezing/crash.
This problem happened mostly when i play conjurer and arcanist.
