no way to see which regular quests you've not cleared without cross referencing with the Wiki, grimtools checklist only works for quest giving skill points or attributes
likewise you'll have to manually check the map for which Dungeons you've not been in
Great for seeing what you miss, there is a map for the adventurer who seek all treasures.
Or use the game's default class change feature, create a new character OHHHHHHHHHHHHHH

Without mods, the only time you can change class is when you don't have any points put in the class yet, or you did put the points down but haven't closed the menu to save it and so you can simply undo the points before closing the menu and you'll be fine. So long you don't have any point set in stone you can select any class's menu to have a look.
Once you have a point in any class, it's final. You can't change class even if you have spirit guide undo your whole class points afterwards.
You will need mods that edit character file to do it.
