I played Soldier for Primal strike - it's solid, with very good survivability. The damage is allright, bu not top-tier.

Demo+shaman from what I hear is very squishy. Should theoretically deal more damage than Soldier.

You mainly have two important skills for defense with Shaman/Demolition. Which is Blast Shield(Demo) and Mogdrogens Pact(Shaman). If you want any other defensive stats it would mainly come from gear or devotions. Fun class combo if you enjoy it!

Separately shaman and demolitionist are solid and very powerful classes; however, combination of those classes are not very great, i could remember only few (3-4) good build, and none outstanding

Demo gives a totem/wind devil shaman some much needed spammable focus damage with stun jacks, and another stacking source of RR. Extremely good for a budget build. Inquisitor and arcanist are better if you have access to everything, but I always found that boring.

I don't mean this in a mean way, but why ask what is good or bad? Why not just pick something you think might work and do it, have fun and experience on your own.

Because the journey is nice until you hit that wall.

You don't need a top tier build to clear the game and you really only start to see that wall once you reach ultimate and fighting the extra hidden bosses. For clearing the main story, any build works which is one of the many the beauties of Grim Dawn. Tag in all the damage conversion items, which become increasingly common as you play, you can also use pretty much any skill combination that sounds fun to you. If you are playing on veteran, some builds we be harder though. Made over 20 characters none based on any guides or outside consideration and all of them have been fun.

Indeed, any class combo can do the main game content outside of the bonus bosses. Once you start with a good base of items you found along the way, then you can worry about making builds to do all the bosses. I do almost exclusively solo self found builds and never hit any wall, the game throws solutions at you with reckless abandon.
