Other than that, in late game you will want to factor in RR (resist reduction) and trying to ensure you have adequate OA, DA and health etc.
GD isn't hard to build for (blind) if you take care to cover these basics.
Avoid following guides and just adapt to your circumstances based on what you get.
A little tip. Focus on item synergies and pick classes that can complement eachother. If you have to many damage types than you will water dawn your damage. If you want a very fast and super fun build for farming and leveling use paladin (inquisitor + oathkeeper) use word of pain + aura of censure + guardian of empyrion. The fun thing is that they greatly complement eachother and you can use build to focus on any of those skills and it will feel different depending on the skill but also you will be using one as a main and 2 as a support. It was my 6th char and i realy regret that it wasnt my first build. Paladin just deletes maps. I step in in area and everything i see dies in a second. So fun. Also super fast farming so you can get items for other classes if you want to experiment. Its a huge time saver. Any other build i played did huge damage but non of them farmed as fast as pala with word of pain and auras.
I usually start by getting interested in some skill, like Grasping Vines, or idea, like 2H melee auto attacker, and then start building around that, starting of course with choosing your secondary class.
And you don't have to choose classes based on what's the best possible class synergy. When I chose the second class for my Vitality Grasping Vines build, I chose Necromancer over Occultist because I had already used Occultist so much, and I also get to use Ravenous Earth which was another skill I was interested in.
Trying out all the skills and experimenting with gear is where the fun lies, at least for me. And since you got bored with your premade build you might find that to be true for yoruself as well. You just have to try. And get rid of the urge to play everything optimally, that's not needed.
Veteran gives a closer indication of what Elite is going to be like in terms of how hard enemies hit/health while Elite difficulty onwards also applies a reduction to your resists.
Or GDefile your way into Elite, or Ultimate for that matter.
