Many of the quality of life improvements are from the expansions though and lots of cool stuff is enabled by them, plus internet guides/advice typically assume you have them (or are way out of date), so be aware that if you really get into playing GD beyond the story the expansions will start to be more and more desirable. If you don't have budget constraints they're worth it even without a sale IMO.
Some would substitute "necessary" for desirable but tons of people got a lot of hours and enjoyment out of the game before even Ashes of Malmouth was released. Tools like GD Stash, Grim Dawn Item Assistant, and Grim Dawn Trained Hard can replace a lot of the quality of life features if that part starts to bother you. And no, Crate doesn't give a damn about that stuff - the game is based around single-player, including modding and whatever tools you choose to use, and the devs have said this outright.
