Also here's the current compendium which covers both expansions. You could again adapt any beginner builds here that you like.

I think I've avoided buying DLCs for most of my games, but I have to say that the ones for GD are completely worth it. You get three new classes, more acts and history (if you get both, AoM and FG). At least, consider buying them on a sale.
AoM and FG is somewhat obvious, it almost doubles the game length (if you go through all difficulties, it'll be quite a bit more), +more classes, +more gear, ++.
Crucible is for an effective way to grind divinity points (w/o tracking down shrines first), and
gear.. The challenge is rather nice too.
It's not that they're so important, it's that the game gets updates periodically so the build guides need to be updated from time to time, and most of the people making the guides have both AoM and FG so the older AoM or base game guides don't get updated and may need some adjustment to work by now.
If you're willing to put in some work to adjust them when you find problems (feel free to ask for help here, just don't expect people to hold your hand the whole way through), then there are build compendiums for both the base game and AoM (depending on what you have) that you could look at for inspiration/guidance (at least once the forums are working again). Note that the base game build guides will probably be further out of date and need more work.
I've seen some people whine that "you need the DLC to make viable builds"; but that's crap. You only need the DLC if you either want the full story (or as much of it as Crate has given out to date) or just want a build guide that will hold your hand the whole way through (and I don't think there are too many that are that thorough anyway).
TL;DR:
Having all the DLC just means that you can use the most up-to-date build guides, nothing more. If you don't have it, don't worry, you'll be fine. Just check out some of the builds at the following link (assuming you just have the base game) and bear in mind that they're a little out of date with game updates, so they may need some tweaking.

(Thanks to MedeaFleeceStealer for posting it here first)
If you have problems making the adjustments and need some help feel free to ask.
Final note:
Don't forget the build calculator, it could help with adjusting things and seeing how things might work out:

They have levelling guides and suggestions for relatively easy gear you can get ingame. See which fits best with how you'd like to play.
Every combination can be good, it's just not always as obvious how to make it good. I personally find Infiltrator (pierce or cold variant) to be the best nightblade combination, but dervish and blademaster are also excellent.
