It sounds like you meant well with your post -- so please don't take offense. I was just in awe, dumbstruck really, that I'd never heard this complaint about a game before. Ever.
I really like the graphics -- never quite understood complaints about it -- but am not a 4K person, content with my BenQ monitor. If it were not a hack-n-slash, perhaps I'd be more critical. The toughest thing for me was having two character models, but one (can) soon forgets that with the gameplay.

It is true, Diablo 1 has outdated graphics and clunky systems
But not Grim Dawn; Grim Dawn's graphics are just fine imo
In fact I really like them; they suit the design and feel of the world
So much better than the washed-out fantasy backdrops popular in some other games
Grim Dawn actually has a world that looks and feels real
Ditto the appearance of the inventory; I see no issue there either
Diablo 3 should not be even mentioned when talking ARPG's.
That's a relatively minor issue, however. Everything else screams superior aRPG.
Aye. Functionality is quite another matter when it comes to a pretty inventory. I was thinking that the design of one (coding aside) must be a fair bit beyond 'typical' GUI concepts as relatively few games have what I consider a great inventory system. I do prefer tabs over scrolling though.
Then one must consider the sheer amount of loot. I never thought much about similar inventory systems in games like Neverwinter Nights as it takes considerably more game time to fill up the tabs. Though you have inventory bags that makes the system a bit more attractive. I can think of a couple of reasons why such might not be in this game --whether coding/engine related or for balance,though not certain which is the actual reason(s).
