How to do rainbow and other pro moves
i mean i go in and the guy starts spinning and kills me so fast. i mean i know how to drag but they block almost perfectly and then do the rainbow move and kill me sometimes i block it but not too often. but when i try to do it it fails misserably.

must learn how to move around them more its all about your footwork if its good enough you can dodge by just moving rotating around also gives you the chance to block as well since all you did was dodge

The trick to people spinning around is really simple, they're making it look like they're going to miss, or ar tempting you into charging forward for the hit trade before they can accelerate. So don't fall for it, you gain nothing by walking forward. Its best to wait for when they get nervous about wasting stamina and move in prepared to block.

yeah there are some moves that you need to block by blocking on the opposite side (rainbow has to be blocked by looking down, some overhead drag hit need to be blocked from behind after a little delay). Mechanic is quite complicate. I'm okay with the blocking part but I'm still wondering, what's the perfect mouse sensitivity to do those drag ? I have the impression other player can drag way further than me.

^ no it doesn't at all, the only thing needed for a parry is for their weapon tracer to be in ur parry box

Drag speed is capped, You do not need to be looking away from their sword to parry, it needs to be inside your parry box. And im betting you being "ok" with blocking would be u holding a shield up the entire game or parrying way too early, u literally need to wait for the last second, then riposte off his swing.
