As an initial approximation, I can tell you that it's around about 0.5 mbps of bandwidth used (1 mbps = 128 KB/s). I run a TF2 MvM server which holds 5 other players and that uses 0.7 mbps on average. Payday 2 uses like 0.4-0.6 mbps from my observations. Using those numbers, determine whatever statistic you are looking for.
Also, I do not think muting voicechat inhibits data transfer. I believe the data is still transferred to your computer but then the game just prevents voice chat from being sent to your speakers. (But I have no clue how it works internally.) Obviously, you speaking into your mic will use up data, but others speaking in their mic will probably still cost you bandwidth.
I may be speaking out of my rear end here, but is having unlimited data on your cell phone with tethering an option? You may want to consider that as your secondary internet source.
These are my records from the past few days with around 3 or 4 hours of play each night. I predominately host games in Payday 2 with my friends, using TeamSpeak for VOIP. Payday 2's VOIP chat hasn't been disabled, so this shows that the usage really isn't all that much.
