As for stealth, can't really say. If you had it, the Gruber because of concealment. Not sure what the highest concealment is for a non-DLC pistol. But none of the stats really matter, since you'll ideally shoot before you're detected, which means it'll one hit no matter what.
If you run the Interceptors as your akimbo you can still hit 4 Detection Risk with a Gruber secondary. You lose some ammo compared to the Bernettis but you also get 18 Accuracy which is great for taking out snipers when you don't have time to switch to your secondary.
That is the trade off, the Crosskill is the middle ground gun but it feels like it gives up too much in either category to be useful. But give it a shot, it may work for you.
A lot of people missed that own DLC because of the Gruber. If I remember correctly the Interceptor was added to the game like a week or two before the Armored Transport DLC.
Oh its a shotgun. Still the best.
