Go with the bronco, more powerful. Anyway if you wanna be really efficient only use pistols with the mastermind skills for it.
But personally i'd go for the deagle,stylish and powerfull.
In stealth,every guard dies after 1 shot.BUT,if he spotted you,you'll need more shots
-1st: maximum dmg n stuff (still lower than 12 acc sux. dont know "best" stats atm)
-2nd: maximum concealment: in case of heavy mm (pistol messiah) stealth (that might ♥♥♥♥ up)
(quite likely that even as heavy mm going stealth a decent modded dmg+stealth-non-silencer car4 + maximum conceal-silencer-swedish-k is better (personally, dont like pistols that much))
3 deagles:
-1st: maximum dmg with decent acc
-2nd: maximum conceal + silencer (rolls well with the above mentioned car4-non-silenced-good-concealed (use of that: in case of stealth ♥♥♥♥ up, u can switch to a 45dmg 12-16acc assault rifle, so the "real" use of the secondary is the silencer) (depends on your car4 but u should roll out with 9-19 detection rate without armor, without ghost-stuff (too lazy to check my stats))
-3rd: maximum dmg with silencer: in case of: u only need the silencer for "some time" but it will go loud anyway/quite likely
still with those +5-6 locos, 3-4 kobus + 3 para´s + 2 swedish k + 2 mp5´s u can buy every other secondary available (most of them suck atm (in comparison (or u like weird fire ratios))) at least one time, so when u get bored during overkill stuff u can play with some lesser used stuff.
oh ya going by ammo, both (30 bullets (unskilled) is MORE than enough for any stealth-mission. also: when a guard spots u, during stealth there is no need of saving ammo, so just nail his face to the wall... also his body, feet, arms and be sure to bounce his helmet/hat around cause... why not.
also: if stealth ♥♥♥♥♥ up and your crew didnt bring ammo, use both your guns. mostly your non-silenced car4 but dont waste (kinda) 50% of the ammo-pickups if your secondary if a heavy hitter like a deagle or bronco (speaking non-dw).
oh yeah car4: have at least 3. since... a long time ago i have 6. 1 or 2 are mostly "just" for one mission (rats d3 covering) but ya... enough slots available so whatever

Bronco outperforms the deagle in almost every single aspect. The only good thing about the deagle is that you can attach a silencer to it, but IMO you're better off with a different weapon, depending on your skills.
Neither of these two should be used as tools to kill normal units all the time due to their poor ammo efficieny, but rather as more special circumstance weapons. Namely for taking out special units or to take out that one cop for Pistol Messiah.
For stealth, a Desert Eagle is a good weapon due to its high damage, suppressor attachment and high concealment, as illogical as that is. Though a Swedish-K can be made far superior as a concealment boosting secondary to take a suppressed primary weapon.
The Bernetti is a great all-round pistol there is, and most versatile. Offering great accuracy, good damage, a large magazine and a huge ammo pool, when upgraded. Gruber Kurz is the same, only trading mag capacity for slightly better damage.
The Stryk and Chimano Custom are good close range weapons for high DPS with low accuracy.
The Interceptor trades some of Bernetti's damage for accuracy, if modded correctly.
The Crosskill and Signature.40 is a good mix for special killing and cop killing. but comes at a reduced ammo efficiency.
They aren't bad guns without the Mastermind skills, but SMGs/Loco will simply serve you better.
If you do own the Mastermind skills, I personally recommend the Bronco. The Deagle may have a much larger magazine size, but the 6 shots per reload from the Bronco aren't really a problem with the 50% faster reload speed.
More importantly, the Bronco manages to hit 100 damage, which is an important number for OVK jobs.
Doing 100 damage per shot allows you to one-shot Cloakers on OVK and if there is one thing in this game you want to get rid of as fast as possible, it's (charging) Cloakers.
