Still, there's no warranty that the game won't end up like Fall Guys or Rocket League, where it first releases on Steam, being available for purchase, then get pulled from Steam to be sold on Epic only.
Tripwire Interactive did a similar thing where they made a partnership with Epic. Same with Payday 2, adding crossplay with Epic for Killing Floor 2 and Rising Storm 2. In the case of Rising Storm 2, it added gamebreaking bugs. Around the same time, they've also announced that their (at the time) new release, Maneater, will be an Epic exclusive.

If they pulled this, they could look forward to a lawsuit over their contracts with Valve, and Starbreeze simply doesn't have the cash to fight such a lawsuit, and both Embracer Group (the new publisher) and Epic are weary of a proxy war with Valve, so they won't fund such things either.
I think some of what Mr_Purple said might hold true though; there may be some platform exclusive ♥♥♥♥ in Payday 3, just to stoke the FOMO.
I pre-ordered pd2 10 years ago and I had enough of this game and company providing it. I loved pd1 and 2 for years, but... Monetising, techincal state of dlcs, licensing problem solving, poor user experience which ended up being fixed by community mods and balancing choices.
