Hoxton Breakout is also pretty solid - takes about 25 minutes or so for both days.
Crime Spree can also be excellent if you're just after money - just pick a bunch of fast heists to complete and stack up the reward money.
EDIT: Also worth mentioning that Shadow Raid isn't that good for money/speed. Best Stealth Heist for money would be Murky Station.

Dragon Heist: Easy, plus securing loot is easy if you disarm all C4
Boiling Point: Very Easy, all cops have DW damage (except tasers BE AWARE OF THEM)
Hoxton Breakout: Day 1: Hard Day 2: Moderate For day 1 you will need a good team and know the layout of this, once you get into the parking garage it becomes easy. For day 2 you just got to do objectives when assaults end, nothing else to note here.
Golden Grin Casino: Easy. You may think it is hard on DSOD, but the spawn rates are so low there are barely any cops on the map at all times. Plus there is a ton of money and if you have the right escape (Van Escape / Blimp Escape) it is easy to secure loot
Black Cat Heist: Moderate: Slightly difficult because of the casino part's open space but there is a lot of money and can be completed very quickly if you know where objectives are. This isn't very good on money but is here for variety / replayability.
Hotline Miami: Day 1: Moderate Day 2: Easy / Moderate. For day 1 you have the option of cooking that good good breaking bad substance (WORTH A LOT), but you don't have to. For day 2 just secure all loot.
Border Crossing: "Day 1": Easy "Day 2": Hard / Very Hard. This isn't a 2 day heist, OVK counts it as 1 but the sections make it seem like 2 days. Day 1 is easy because there is a lot of cover in the biker house and the objectives are fast. Day 2 on the other hand is not to be underestimated. This is the part where you will earn a lot of money and loot here, (roman armor set + tons of small loot you can run with [coka cola]) However, if you fail here, you will have to start back on Day 1. There are many open spots, and many objectives are in these open spots. You should only do the objectives during a Fade or Control phase. The maximum amount of money I have seen is about 12 Million.
Cook Off: Easy (but takes a LONG time to earn money) WALTUH. GET BACK TO COOKIN WALTUH. This heist can make you millions with only one bag of that Breaking Bad substance I talked about earlier, but it takes a long time to produce. Plus once the house runs out of ingredients you have to call in a supply drop and wait until more ingredients can be delivered to continue cooking.
