When you play to much time, you can pass or beat mayhem and deathwish with only amcar, chimano 88 pistol or stric 18c pistol, one perk - rogue is good perk - no armor and cero skill tree.
But if you want a profile or build...
Take Tank skill tree, shootgunner tree, medic or hostage taker tree, armorer, stoic, or "gorila" perk, and your favorite shootgun in both hands; izhma or predator if you have bad accuracy, reinfeld 880, akimbo grim brothers if you have normal accuracy and mosconi if you have great accuracy, all in master hand.
If you like pistol, change shootgunner skill tree, and use pistol skill tree. You must use akimbo pistol, and you can use same perks, or hitman perk for better stability and armor recovery. Hitman is a very good perk in my opinion. Strick 12 c is a very good option, bernetti , crosskill, crosskill guard be super good options for high ammo weapons, and bronco, castigo revolver, chimano special be high demange and low ammo weapons; all in one hand or akimbo version. You need test what weapon is best for you.
If you like use machinegun or microgun, to be sure to follow body expertice skill, and improve every stability skill, except silencers skills. Please, be a good boy and never put a silencer in machinegun. Same skill is good for low accuracy rifles -amcar, car4, JP36, AK, AK5, etc. It´s a good idea use body expertice skill if you carry dual pistols, or any weapon, but remember, Body expertice not work with specific weapons, read carefully skill description, and remember too, every time is better head shoots and not put skills points in this skill tree.
If you play with stoic perk, use medic skill tree and improve first aid kits. But is ok if you improve medic bag.
Please not use sicario, because it´s bug to day. Developers no fix the bug in months. Smoke graneade refresh time no go down for every police killed.
If you like evade, rogue is the best perk yet. Crook and Hacker is good too. You need change armor skill tree for evade skill tree. You have less armor points, but be more fast running, and carry bags. Be a clever man and use critical hits and low detection risk weapon set; example: Akimbo Bernetti pistol, mosconi shootgun, car-4 rifle, jugde shootgun, compact-5, etc.
When i am use hostage taker skill tree, i am like to much use equip leader (master mind?) perk deck. Both go in same way
Any way, enjoy making yours profiles-builds. Is a good step for understain how play the game, improve your player skill, discover your play style, and go foward. People can advice to you a lot something, even can lie to you. Best way for answer your question is test skills, perks and weapons for your self.

Pretty care-free build, you can switch pistol skills for SMG or nade launcher if you feel like it, if not - pick a pistol of your liking (I use 1911) and outfit the MG42 to your liking (I only use a stability boost to keep the gun's visual). You won't be using your secondary much, only for snipers really, which is why it's up to you.
