Wow, like every single company ever? As long is it optional I don't care, but you will probably need for goodies and PAYDAY 3, who knows.
Why sign up with Steam which is owned by Valve. Oh, wait, some people think Valve doesn't sell the data, that's cute. They do, just not in the standard way that most companies do.
The thing is though being aware of things and limiting exposure when you can.
Some digital trinkets does not seem enough to me to drop my pants. That may differ to a lot of people... still does not make anyone wrong for pointing out how it works.
Just because other companies are doing it doesn't meant you should support it when this company starts to do it. You shouldn't support it when any company does it. Whether it be Starbreeze, Valve, or anybody. Draw the line in the sand before "It's just optional" turns into "it's the way we've always done things."
The possibilities could include even CROSS PROGRESSION down the line and CROSS PLAY so I can't see this as a negative.
Does some people think that they would be getting some sort of personal data out of us this way?

Actually not... Google and Microsoft do this daily on my phone and PC without asking so... Yeah... It would be just another drop in the ocean.
As I grow older the world is just more and more depressing. Even the holidays are warped just like modern practices. Humans are cattle. Just another mark.
Sorry to break it to you, but a couple of things to note.
Unreal engine cost. It used to be 25% but Tim Sweeney recently lowered it and the line at they started to charge for it. Thing is Starbreeze is looking to save costs.. going epic exclusive lets them use the unreal engine for free. Also we don't know what kind of contract they signed when they started to use the engine.
Secondly and probably the most obvious thing.... They do not have a Payday 3 steam store page.
Games like Kerbal Space Program had the KSP2 steam store page up when they announced KSP2.
You know Starbreeze wouldn't ignore free advertising... if they were coming to steam they would have a store page up by now. Steam rules prohibit games from promoting on the platform if they intend to be exclusive elsewhere.. they can be fined. This rule was implemented shortly after Epic started with the exclusive stuff.
So basically the fact there is not Payday 3 steam store page pretty much confirms it will be an epic exclusive.
That is why I think the sign up thing is going to be a backdoor epic launcher.
If it goes EGS exclusive then so be it. Will be a shame since my "hype" will be pretty much gone by the time the game releases on Steam but there is enough suckers in the community to support them even on EGS anyway.
Even thought, to be honest, I'm way more concerned about the game being actually good than which store it releases on first. I can wait. I won't be hyped anymore but if the game is worth it, I'll wait. But, I fear it's going to be another dud or a very underwhelming experience compared to Payday 2. As far as I am concerned, I lost confidence into Overkill as a videogame developper. The only reason I'm still here is that there a shred of hope in my mind that they won't ♥♥♥♥ this up. But, it's just that, a small shred.
