I'm not going to grind. I like payday 2 a lot. No incentive would ever be enough for me to spend months of my life grinding for level 500 infamy though.
It's possible, but it would be painful
If you just grinded the best heist constantly i feel like you could get at least 2 infamies per day , maybe even more
EDIT: For ♥♥♥♥♥ and giggles I did the math. Let's assume that on Nov 11, a player was infamy 25. Now let's assume that they did nothing but diamond store rushing to maximize XP efficiency, so they're getting 1 infamy for every hour of game time. It's been 132 days since Infamy 3.0, so 475 infamies in that time period would require playing 3.6 hours per day minimum.
I know some very dedicated & active players, and they are between Infamy 75 and 125-ish.
It wil be a long, long time before anyone reaches Infamy 500 in a legit way.
Also don't trust the Diamond Store math. A full Infamy takes 23 Million XP. One hour allows for ca. 12 Diamond Store completions, the example would require a single run to give 2 Mil XP - not even close to what you really get. Also, nobody in the world would repeat that for 500 hours. Forget the theoretical examples.
With sustainable ways of getting XP, the reality is: one Infamy per day.
And even the most active players don't do this 365 days a year...
However, you are incorrect in the feasability and speed of Diamond Store rushes. I have completed a full infamy in an hour myself doing this strat. Only did it once because it was boring AF, but it is 100% possible to get a full infamy per hour doing it. Each completion takes about ~1min in game time. Return to lobby as soon as XP calculates, immediately purchase and start another one. Assuming everyone is coordinated, you're completing a Diamond Store every 2-3 minutes, which means 20-30 completions per hour. Each completion gives you about 1MM XP, and you only need about 25 completions to go from 0-100, taking into account the 10% reduction in XP for the first completion at level 0 and the 30% heat penalty, hence why everyone using team boost weapons for the extra 24% xp is so important.

I think the highest legitimate infamy level is probably somewhere around 300. I saw a few legitimate players back in late January/early February that were at around 175-200 so I could see those same driven players being about another 100 levels higher now. Even casually playing you can easily get 1 infamy a day, so grinding you could do 5-10 a day if you had some dedication.
I always host pub lobbies so you may see me around grinding - feel free to join, always teaching new players how it works. With new players on average it is probably 2:00 per heist instead of 1:30. But it is still the fastest xp in the game - I haven't seen any calculations to suggest even golden grin or big bank ecm rush is better (noting how complicated these can be to coordinate and that failure = losing multiple minutes of gamplay versus a few tens of seconds if you fail diamond store).
Edit: I'm about to hit 100 and I only started grinding end of December a few infamy levels a day.

If someone is willing to get to 500 for some reason, It's totally possible they'd be there by now.
The real question is, is there someone who actually grinded that much for infamy 500?
with random players (usually not everyone has a team)
different heists (playing the same heist is a perversion)
you can get 1 infamy in 2-2.5 hours.
