- Crime Spree is always good for stacking prizes, money, and EXP which can assist your 0 to 25 Infamy run easier.
Otherwise, just play any heist. If you only want to focus on fun, stick to OVK or Mayhem difficulty. Death Wish is debatable but only recommended if you have proper experience for it.
Just shy of 136,000 XP too.
And the update has made it more interesting with additional maps.
Not sure it qualifies as fun though :/

"Fun" Depends on you
ecm rush shadow: in under 3min you can get 11mil+ and 700k xp(XXV bonus so for non infamy i'd say ~280k).
For fun i usally run crimespree: you can get alot of card drops/money but the xp is meh unless you go for 300+ or play with someone at 1k+ or you could always join my 50k spree aslong as theres a free slot.
I personally find myself playing Big Bank a lot when I want to have fun, so perhaps try that.
