I was listening to this song w/ lyrics on YouTube and the description said it can play occasionally (the version with lyrics) during assult. Is this really true!? If so, that's awesome!! And also (assuming it's true) how often is it? Every so often or truly randomized and rare?

Yes, it's true. They appear not very often, however, and it's apparently decided very early on in the heist if they play.
There is also a mod that makes the lyrics appear all the time:

Ode To Greed has the instrumental and normal version with Simon Viklund sings in Opera style. Only 2 songs with lyrics that was add to the game as heists' music so far.
