Local Co-OP?

on the store page is says Co-Op. Can my girlfriend and I play this together with one copy of the game on my computer?

Except Coop only means Coop Mode - the store has a seperate label if Local gameplay at the same machine is support at all.
Coop does not mean "local coop", it means Coop in general.
It's not mislabeled, you're just interpreting it wrong. Your fault, not Steam.

Serious Sam has the Tag for
Multiplayer (competitive, PvP Mode)
Coop (Cooperative, PvE Mode)
Splitscreen (Due supporting splitscreen mode)

Showing that the Splitscreen is a seperate, independent tag from Coop in Steam and always has been.
And the "Local" Tag is used for Local Network (Lan) games.

yes... I was about to correct your ""local co-op" notion meaning anything about splitscreen.
I'm glad steam makes that clear.

split screen was a wonderful thing in the past, now we have huge gaming keyboards with 3 screens, we don't have the space for 2 people on one PC now do we?

Well, usually, there is not enough room for two people on one keyboard. Or on one mouse.
If you're using a controller or even two, that might work - depends on the game of course.

Tournament Fighter, Beat'Em Up, Top Down Shooter, Racing, Platformer, anything turnbased,...
In fact, only FPS, TPS and RTS won't work well with this simply due the controller being not suited well or downright incompatible with the genre.
