It's on day 3 Framing frame stealth ONLY.
To save memory or something, the map contains all three vaults at once, but only one used to be accessible. The funny thing is, once the real vault opens and the gold becomes activated, it's possible to pick up gold from the other two vaults as well - regardless, you can only zipline 8 in total, once you reach this limit you cannot secure anymore, they merely fall off the map when dropped from the zipline - however you do get to keep extra bags if you hold them on your back while escaping, a crew of 4 could theoretically leave with 12 gold this way.
Largely pointless, and unintended glitch you shouldn't be able to access, but it's there. The HUD picking up 8 extra gold bags is a side effect of having the vault behind the Old Wine room "load in" or something. It's not meant to be accessible.
You also get to keep the cocaine that gets thrown down during the stealth portion, if the heist goes loud between getting the coke and planting it, as well.
You can secure the Old Wine on your back or via the zipline...at the moment it doesn't appear to give you a notification though, but it does get secured.
Also, the fact 24 bags of gold exist on the map makes me think that is the reason Bain never shuts up about not being able to reach the gold and how it feels bad to leave the gold behind, despite the fact the vault is open and you're busy swag bagging it.
Why does the bank manager have wine at work? Because he hates his job and everyone around him.
Our crew visit this estate regular, so probably this is a reason. ;)
Especially loud variants make him a little nervous i guess.
