Medium damage: Best options are the LEO and Interceptor for both singleton and Akimbo.
120 damage: Only one worth your time is the 5/7. Either go down to 65 damage for spam and ammo, or up to revolvers for maximum OHK potential.
Revolvers: Best secondary is the Parabellum (best overall pistol too), though the Bronco and Castigo are also good. I've heard very good things about Precision Broomstick pickup but I don't know the nitty gritty of most others.
STRYKs: By far the best for killing Dozers due to its stupid DPS with Gun Nut Ace + Trigger Happy. However, use them sparingly as they guzzle their ammo quickly. For a 3 pistol build, I wouldn't consider because pistols are already really good at killing Dozers, but that's me.

But I don't since I use other builds, but that's a decent base. No way you're fitting HT + Inspire + Swan Song when you need so many skills to use the pistols.
Is not about babysitting, is all about reducing the risk.
At Death Sentence, enemy deal above 200 damage. Without Inspire, revive takes about 6 seconds.
And time is not a luxury we always have in the highest difficulty.
Going to try your builds, they seem very good
The idea with the STRYKs is that you should use them like the low-damage spam pistols in single-fire most of the time, and only go full-auto for dozers.
