if you have to however i would probably go with the anti infantry guns, with a good gunner and optimal conditions you can get a few kills with those.
i have seen a group of people use guided rockets, seem to work pretty nice for them, plus they sound pretty neat
The VLG is hands down the best anti-armour and anti-infantry weapon, but it sacrifices all defence against air. You also absolutely need to max out reload speed before considering using it, but once you do it's very powerful. It rewards accuracy by having the lowest TTK against tanks of all the valk guns and OHKs infantry on a direct hit, it's not very good against sudies or harassers though. I reccomend thermals and getting ammo capacity as high as you can afford.
if you want to focus on an anti-lib role (something the valk excels at if you can make use of the bottom armour) then you could try the hellion, but I wouldn't recommend it, especially if your gunner isn't very experienced with the play-style, you'd be better off sticking with the wyvern for anti-air.
Those are the best weapons for the valk right now, don't even bother with the CAS or pelters, the CAS is serviceable anti-infantry but still fairly poor and pelters are just a joke.
The valk is a criminally under-rated vehicle because few people bothered learning to fly it properly on release, and now with the armour changes it is incredibly powerful if you know how to work it to your advantage.
This ^
not much else that could be added to that, but as Gom said the biggest problem for people is they try to fly it like a ESF or Lib when thats not how its ment to fly.
even a badly kitted valk can 1 vs 1 a ESF and win if in the hands of a skilled pilot, yes even against the top dogfighters.
