Feels like there's always too many quests
I'm just on normal speed progression, not even fast, and yet by the time I finish a single quest, I've gotten and failed 2 or 3 timed quests even though I'm also on low stress mode.
I'm guessing I should just go to slow progression, but this feels way too fast for "normal" where I'm getting quests occurring basically every minute or two

I was pretty overwhelmed until I realized we're not supposed to do all quests. A lot of them are just bonus quests you can safely ignore if you have more crucial quests waiting. On the other side of the scale you have quests that will spawn more quests if you don't handle them quickly.

Some quest types also stay around much longer than others, so you'll eventually know which ones you can leave for later.

It's supposed to be that frantic. :)

You can often tell from the quest dialog's wording how urgent it is, and with time you'll see which quests are the most urgent to focus on. It's been a while since I've lost a town in that game.

Thanks for the responses - I think I'll still lower the progression speed though and just take the penalty of less experience, since I don't like it to be so frantic

Good plan!

This is actually my favorite Soldak game in terms of gameplay, but I've not played it in a while because I miss all the UI improvements that the later games have.

You're meant to fail some of the timed quests, and some of them transform into different quests when you fail them. This is a game about decisions, not everything will get done, not everybody will get saved.

That monster you were asked to take out, he's probably going to start getting a group together to cause trouble before you ever get to him, so that's going to be marked as failed, but turn into a different quest.

There are people that are kidnapped that will be killed as you're going to try and get them back. You win some, and you lose some. If you can become good with that being part of this game and just play the game on its terms, accepting these things, I think you may find a very interesting game and find what makes this stuff unique and well liked.

Of course you don't have to, and slowing things down is absolutely allowed and up to you. The settings are there because they're meant to be tweaked to the liking of the player, so tweak away! You can even do different settings for each town run, try it one way, if you don't like it, try it a different way for a new town.
